Enjoy the spicy flavours of cinnamon, cardamom, cloves and ginger while getting a little kick from the organic black tea, in these creamy chai popsicles. These are “mature people’s” popsicles, made specially for basking in the sun… Why should kids get all the fun?

Creamy Chai Popsicles

Instructions

  1. Whisk coconut milk, cardamom, cinnamon, ginger, cloves and peppercorns in a small pot.
  2. Heat to just before boiling point, then place lid on pot and gently simmer for 10 minutes- until milk is barely bubbling.
  3. Remove from heat, and stir the black chai tea into the coconut milk & spices. Allow the mixture to infuse for 5 minutes.
  4. Strain tea and spices into a container with a pouring spout, and stir in honey.
  5. Let cool, and when room temperature, pour into popsicle molds and place in the freezer.
  6. Allow popsicles to sit, undisturbed, for 6 hours in the freezer. Pop them out of their molds, and indulge & enjoy!

Recipe Notes

For extra sweetness, add 1/2 a banana to the coconut milk, and blend until creamy, then proceed as usual! (per 8 popsicles)
