Simple Chocolate Chai-Chia Seed Pudding

Instructions

  1. Pour just-boiled water into a heat-safe container and steep the chai tea bags in it for 3-5 minutes (or as long as is recommended on the package).
  2. Remove the bags, squeezing out the excess liquid.
  3. Mix the steeped tea, coconut milk, maple syrup, cocoa powder, and vanilla in a pot and whisk to combine.
  4. Add the chia seeds and whisk again
  5. Cover and place in the refrigerator overnight to chill.
  6. Remove and whisk once more to redistribute the seeds.
  7. Top with fruit of your choice. I chose fresh, local peaches, but strawberries would also be a great match.
  8. *Optional- Instead of mixing in bowl, try using a blender (vitamix is our favorite) to combine ingredients. This will help whip it into a thicker, more decadent pudding.
